This is a Namachzshua sake that is stored unpasteurized at low temperatures and only flash pasteurized right before bottling. This specialized process locks in a vibrant, lively character that dances on the palate. True to its name, it opens with a beautifully bright, flowery bouquet that invites you in. On the palate, it is wonderfully light, clean, and
